Alu Capsicum baguette pizza

Yet another "Left-overs" recipe- Quick and easy to make....this brings back memories of the Indian style pizza (the ones that had the hard thin crust, grated amul cheese, onions and green peppers and some good old tomato ketchup). If you live in Ahmedabad you can just head over to Khowdhra galli (literally means a place to hog) for "Jassuben na pizza".
I had some leftover Alu-capsicum sabzi, some parmesan-mozarella and cheddar mix shredded cheese and a baguette from Panera Breads
All i did was soak the baguette lightly in water- otherwise it will turn out to be very hard to bite into- you only have to do this for a stale baguette. (you can alternately use toasted bread or readymade pizza base too). Top it with some ketchup, alu-capsicum sabzi and cheese and bake in a preheated oven @ 350 degrees for 10-15 mintues till the cheese melts.

Garnish with some more fresh cheese for the desi style pizza effect and serve
