Paneer Capsicum

A quick, easy yet delicious meal that can be made in under 30 minutes when you are rushed and tired from a long day at work.
Serves 2
250 gm paneer - diced into cubes
1 green bell pepper chopped into big pieces
1 red bell pepper chopped into big pieces
1 small onion chopped into big pieces
2 small roma tomatoes chopped
3 tsp chopped coriander/cilantro
For tempering
1 tsp cumin seeds
1/3 tsp turmeric
a pinch of asafoetida
1/3 tsp chili powder (or as per your spice level)
salt to taste
3 tsp oil
1. Heat oil in a cooking pan, add cumin and when they crackle, add the turmeric and asafoetida.
2. Add the chopped bell peppers and onions and salt and let cook till they are almost cooked yet crunchy.
3. Add in the tomatoes and cook for 5-10 minutes and add in the paneer cubes.
4. Add chili powder and cook for another 5 minutes and serve garnished with coriander.
